I devoured this. And I don't even regret it.


-Torta Del Re-
(King's Cake)


This traditional cake of the region of Piemonte in Northern Italy is popular among Italian Jews for Passover as it has no flour. I love this cake for so many reasons; its low carb, is a great source of protein, doesn't spike up my blood sugar levels (low glycemic index) if you use agave, and  has the texture and flavor similar to lemon poppyseed cake. I paired it with cream cheese frosting and dried cranberries :)


-Ingredients-
-5 eggs, separated-
-2 cups almond meal ($5 at Trader Joe's)-
-1/2 teaspoon salt-
-1 teaspoon vanilla-
-1 teaspoon almond extract-
-Zest and juice of one lemon-
-1/4 cup Agave nectar( $5 at Trader Joe's) OR 1 and 1/4 cups sugar-


-Directions-
Grease springform pan or 10" round cake pan. Lining bottom with wax paper is also helpful. Heat oven to 325 F.

1. Whisk egg yolks until light in color.

      2. Beat the rest of the ingredients except egg white, ending with the almond meal. It will be very stiff at this point.

3. Beat (with electric mixer) egg whites until at a soft peak.

4. Combine one third of the egg whites with the rest of the mixture to loosen it up.

5. Fold the rest of the egg whites in, and put in greased pan.

6. Bake for about 30 minutes until toothpick comes out clean. Let cool completely in pan. Remove wax paper from the bottom.

7. Prepare it however you like; spread frosting and top with dried or fresh cranberries and lemon zest ,sprinkle slivered almonds and confectioner's sugar, top it with fruit and jam for breakfast.. seriously, possibilties are endless. 


-Cream Cheese Frosting-
-4 ounces Cream Cheese, room temp-
-3 tablespoons Agave nectar-
-3 tablespoons heavy cream-

1. Combine cream cheese and agave in a medium bowl until well blended.
2. Whip in heavy cream until frosting is thick.
3. Serve/ Decorate.
